Help with South Island Itinerary using public transportation

I am trying to work out an itinerary for October of this year to tour the South Island of New Zealand using public transportation. Is this plan workable? Fly into Queenstown from Melbourne and spend 2 nights. From there go to Te Anau for 2 nights to see Milford Sound. Then I guess we would have to backtrack to Queenstown or maybe Arrowtown for a night before traveling to the glaciers where we could spend 2 nights. Then we would go to Greymouth and stay 1 or 2 nights. Would we be able to get to Pancake Rocks by public transport? From Greymouth we would take the train to Christchurch and stay there for 3 nights. Because of the travel distances and the terrain of the roads, I am unsure about the number of nights we would need to stay in a given location. We are an older couple who will not do any real hiking, because my husband has bad knees. Thanks for any help with this plan!
