Help with Australia Itinerary

I'm usually really good at planning vacations, and enjoy it. However, I'm feeling a bit overwhelmed with this one. My husband and I are traveling to Australia (flying in and out of Sydney) in August, with a 5 year old and a 10 month old. We have ideas of what we'd like to do/see, but nothing really firm, except our desire to see some of Sydney and also visit the GBR. We want to see the highlights, but not cram too much in as cranky children are no fun on vacation. Any ideas or suggestions for us? We are on a budget, so the cheaper (or free) the better.

Arrive in Sydney 8-August early morning
Planning a day trip to Blue Mountains 10-August
Plans to see: Opera House, walk across the harbor bridge, royal botanical gardens, any indoor activities? We’re not too afraid of the temperatures despite it being winter there. Anything really fun for kids that we are missing?
Fly to Cairns 12-August, staying in Cairns. (this flight is not booked yet, so dates can be adjusted)
Would like to do a day trip out on the GBR, also want to go to the Kuranda Koala Gardens so our 5 yo can hold a koala. Would like to spend 1 full day at one of the beaches between Cairns and PD, which one? We are comfortable renting a car, but if it’s not necessary, that would be great as I'm terrified about driving on the opposite side of the road. Are there buses to get us to the beach?
Fly back to Sydney 16-August, flight home 17-August early.
