Try the National Trust website for Australia. We belong to National Trust here in Victoria and there are quite a few magnificent old buildings dating from the 1800s. The Rocks area (near the Opera House) is one of the oldest parts of Sydney and has some lovely old buildings. Cairns is much newer and there are a couple of older buildings but not many.
