For a very authentic South Pacific experience Samoa is the place, however there is not a lot to do there and after about 3 days the 12 y.o may become a bit bored. Fiji is a must and I would then go for the Cooks. Remember that you are in a warm and humid area of the world and hiking is not always the best method of exploring. As village life is the way of life, a village school would certainly be a different experience for the 12 year olds.
Should you consider Samoa I can recommend this company

DownUnder is correct. Fiji is a must! We're planning to there next year with friends.
