I am planning my honeymoon to Fiji and the 1st stop will be the coral coast followed by a private island at one of the north east resorts. I am having trouble finding good feedback about the following resorts options on the coral coast. I am looking at these 3 choices. Outrigger, Crusoe’s Retreat or Rydges Hideaway. I see a lot of the places here are family friendly but would prefer a location with a decent beach & pool to have different options available.

Not sure if I will help but I travelled around Fiji for a month and saw a few things!
I did more the backpacker/hostel/el cheapo route, a lot different from your trip but on the Coral Coast I stayed at The Beach house. On one of the trips I scheduled they picked me up at the resort next door which was 5 star. If you look at the addresses you might be able to find it. I was only at the front but could see through to the beach and it looked very nice.
Coral coast is great because it is sheltered (by the coral) and is a prime spot for swimming, and some basic snokeling. It is quite a way out to the coral shelf to get any great snorkeling in.
If you are only crashing for one night before heading on somewhere else my vote would be to see if there is a double room at The Beach House. This is where they shot a reality show for the UK and it is pretty nice, has a pool, the beach isn't combed though. (But it is a hostel.)
If you are staying for longer and want that "resort" feel then choose somewhere else for sure!
Have fun in Fiji! I absolutely LOVED it! And drink some Kava; worth the fun. But do it on a tour of a village somewhere. Very fun.
Because you don't say in your profile (as most don't--annoying-)or in your request I can't advise on the wonderful packages you would get to these resorts from Australia.I have stayed at Hideaway and it would suit your needs but I would think either of the other two would be slightly better (and slightly more expensive)
How private an island do you want as there are some extremely expensive ones in the Yasawas and ones not so expensive but not as private. We stayed last year at Nanuya Resort on the Blue Lagoon , famous for where the film by the same name was shot. Would highly recommend that.
