our first visit to Rarotonga is coming up this october. Before we go, I would like ask someone here if it's better to exchange New Zealand dollars in the U.S. or get them once we arrived at Rarotonga?

You could change a few dollars in LA before you leave, that way you will have cash on hand for any unexpected incidentals. Once you get to Raro make sure you have your eftpos (debit) card with you and then you can use an ATM in Avarua.
Whilst cash is easier to use there when making small purchases it is a pain to have to carry a sizeable chunck of cash about, especially if you were to lose it. Easier to withdraw cash as and when required on visits to Avarua. (though bare in mind your bank will most likely charge a transaction fee for cash withdrawals from the ATM)

Another question I have is if anyone know whether most of the activities (island trek, horse riding, etc) on Rarotonga can be paid with credit card, or do they require payment in cash?

For these activities it may be easier to have cash on hand. Unless things have changed dramatically, the horse trek leaves from a paddock inland from the Rarotongan Beach Resort. No credit card facilities there. I can't comment on the cross Island trek as I have not done it.
