Canberra or Beach Relaxation

Thanks to input from this forum, I've fleshed out an itinerary that includes Sydney, Melbourne, Uluru, and Cairns over 16 nights. We have three nights to fill before a flight to London, where we will spend five nights before returning home. We are leaning toward spending those three remaining nights in a rental house or cottage on the beach outside of Sydney rather than seeing Canberra. By the end of our stay in Australia, I'm afraid that we will be museumed out and citied out, plus we will need to launder clothes before getting to London. Will we later chide ourselves on bypassing Canberra if we opt for the beach? Also, any suggestions on a place to stay on the oceanfront where we can have privacy, a beautiful beach, access to restaurants, and do our laundry?
