Between a rock and a hard spot

We will be on the South Island between November 6 and November 22. Our normal method of travel is has the route determined but not book any lodging until a day or two before we get there. I need to add that we need a room with a refrigerator and microwave. That cuts down our choices.

Among our stops we will be two nights near the glaciers and 2 night at Te Anau. We will be able to find rooms available in the middle of November? Your thoughts on how to be flexible but yet get rooms will be greatly appreciated.
