Best Month? New Zealand, Australia, Cook Islands

My husband and I are planning a month long trip to the South Island of New Zealand, Australia (Sydney and Cairns) and then a stop on our return to either Fiji or the Cook Islands. We will spend the most time in New Zealand. Because of work schedules, my first choice is departing the US around April 10. The first week of April is not an option. I could also be gone February or March but April is our first choice.

We don't like hot weather and prefer to travel when it's a bit cooler. We are not hikers, but do like scenery and I want to do the Shot Boat trip, a Great Barrier reef snorkeling tour and a must is the Sydney Harbor Bridge walk. No one can predict the weather, but what is everyone opinions on April travel? I think it might also be a bit less expensive. Thanks for the input.
