Australia - Hikers - Melbourne and Beyond

We have three weeks in late November and early December 2012. We are considering the following locations:

Great Ocean Road
Kangaroo Island
Barossa Valley
Grampians

Comments about what not to miss, and where to eat and stay. We are considering Southern Ocean Lodge which we know is expensive but well situated and inclusive. Some is recommending we backtrack to Wolgan Resort, which is closer to Sydney because the walking and mountains are great. We have been in Australia 4 other times, so this is the only area we have not done in depth.
