Advice on Tasmania itinerary

I'm planning a 10 day holiday in Tasmania for the end of April. We have previously seen Hobart / Strahan / Wynyard (tulip time) / Mole Creek Caves - West Coast area. We enjoy good food, photography and walking.
This time I am thinking:
Day 1 (Wed) - Arrive Hobart 1:45, drive to Tasman Peninsula. Possible quick walk on way - Waterfall Bay. Port Arthur Ghost tour in evening
Day 2 (Thurs) - Sunrise - Tesselated Pavement. All day: Port Arthur, Isle of the Dead cruise, walking tour of Port Arthur. If time in afternoon, drive to see the Blowhole, Tasman’s Arch, the Devil’s Kitchen
Day 3 (Fri): Tasman Peninsula - Blowhole, Tasman’s Arch, the Devil’s Kitchen if havent had time, or Waterfall Bay if missed that. Thinking about Pennicott Journey's cruise if weather is ok. Any other ideas for this area?
Day 4: (Sat) : Start the 'Great Eastern Drive' - Port Arthur - Coles Bay. Stop in Triabunna / Swansea. Possible kayak sunset cruise in Coles Bay.
Day 5 (Sun): Coles Bay - Bicheno - sunrise at Cape Tourville Lighthouse? Wineglass Bay walks - how hard is Mt Amos? Spend the day exploring Freycinet area. Penguin tour at Bicheno if we get there in time. Is a day enough in the Freycinet area?
Day 6 (Mon): Bicheno - St Helens - want to see St Columba Falls. What else do you recommend in the St Helens area?
Day 7 / 8 (Tues) : Not sure - possibly more walking on the East Coast or maybe head to Launceston. Need some advice!
Day 9/10 (Wed / Thurs / Fri) : Heading to the West Coast to Corinna - rainforest walks / river cruise / 'disconnect' from the world for a few days. Fungi photography!
Day 10 afternoon - head back to Hobart
Day 11 - Salamanca market and fly home late afternoon. We've been to Hobart before so don't need more time there.
Any thoughts appreciated! Nothing is set in stone as yet. Would love good walk recommendations (up to about 10kms), good photography spots, great seafood spots. Thank you!!!
