What time of year are you traveling?
With the exception of Siem Reap, all of the places you have chosen are large cities - is that what you want? You won't have to sacrifice comfort to find unique places in any of these cities.
You've listed Hanoi and HCMC in VN - you can opt for these two places and the surrounding a areas (Hanoi and Halong Bay, HCMC and the delta) or you could do a trip the length of the country in two weeks, stopping also in a central are like Hue/Hoi An. In Hanoi the elegant old hotel is the Sofitel Metropole.
In Siem Reap, look at the Hotel de la Paix.
In Thailand, you've listed Bangkok and Chiang Mai. I assume when you are in Chiang Mai you'll want to get out into the countryside. You might consider the Golden Triangle area - look ay the Anantara at the Golden Triangle. In Bangkok, stay at one of the lovely hotels along the river - the Peninsula or the Oriental are the top hotels for honeymoons.
Hong Kong hotels are quite expensive, but you have some wonderful choices.
Have you purchased guide books for all of these places yet? I recommend that you do. SOme you can get for your iphone, very convenient.
Just a head's up, the Hotel de la Paix in Siem Reap is no longer - it's being rebadged as a Park Hyatt - not sure if it's open yet. It was a beautiful hotel even before.
I think the HDL Paix wont open till late in 2013
