West Coast of India for 3 weeks

My wife and I are traveling to Mumbai for 3 weeks in February 2014. We have trawled the books and websites and are looking at flying down to Kerala then traveling back north via Goa to Mumbai, perhaps by train (or not).
We are middle aged and passed roughing it, we like nice hotel (spas) but will enjoy paying the right price.Looking to hang out at or near the beach with some winter sun whilst the bad weather remains in the UK.
Any direction or help would be appreciated.
