First of all, thee is no need to do a tour. All of those places are easy to travel independently, even for the first-time Asia traveler. So don't hesitate to do it on your own.
Second, since you want to include three countries plus a major city in China, you need to limit the number of stops and make sure you spend enough time to get a flavor of the culture (very differnt in each of these places). Most likely, you'll want to narrow your focus. If you had three weeks on the ground in Asia, you could visit one location in each VN, Cambodia, Thailand plus visit Hong Kong. Or you could spend three weeks in Thailand with a side trip to Angkor in Cambodia.
Read some of the trip reports here to get an idea of what might interest you.

Thanks, kathy; You are obviously very familiar with Asia and I appreciate your input---what trip reports are you referring to and are there any months you would suggest not to go there. Thanks.

December,January,February are our favourite months in South East Asia.Its really quite easy to do it on your own but Kuoni will tailor make whatever you want.

I know many people say you don't need a tour, but the logistics of flights, hotels and tours seem impossible. I've looked into booking everything myself and it's alot of work. I've decided to book with Friendly Planet. I've priced the airfare at $1400 just to Hanoi. When you add the other flights and everything else the package at $2600 isn't too bad. How much cheaper could it be doing it yourself? Am I mistaken?

The the top of the page where it has a blank and says -search- type in the countries you are interested in and you will get the relevant info to your left. OR, type in 'trip report and country' and you will get trip reports for the named places. (You can also go to Frommers, get to Asia, country and look in the listings for 'trip reports'.)

www.talesofasia.com is an excellent resource for Cambodia. I would do an overland loop of Bangkok-Siem Ream-Phnom Penh-Saigon-Phnom Penh-Battambang-Bangkok if I had the choice. Hong Kong would be the airplane part of the trip.
