Vietnam Trecking in Sapa area

We are two women in our fifties who are in a hill walking club in Ireland . We are going to North Vietnam for for the first time for 9-10 days the end of April next year before we meet up with a group who are going to visit Siem Reap for 4 days then we will spend 7 days in southern Cambodia to celebrate my friends birthday by the beach. ( she has family living there)
We would love to trek around Sapa .I have been researching the forums on Vietnam and I see we will need to get the train from Hanoi overnight to Lao Cai. My question is do we start walking from Lao Cai or do we need to go to Sapa. Can anybody recommend treks and places to stay along the way and a guide would be great.We want to see the countryside while we are there.
Is this schedule realistic that we hope to do We have 2 extra days to play about with.
Hanoi 3 nights
Halong Bay 1 night
Sapa 4 nights
Siem Reap 3 nights
Sihanoukville 7 nights
Phnom Penh 2 nights
