Two weeks trip to Taiwan around Easter

I'm travelling to Taiwan between 23.3 and 6.4 with wife and kids (two girls, 4 and 8 years old) and I still need to draft an itinerary. We have booked the flights in and out, but nothing else yet.

I'm primarily interested in photography (anything, from man-made to natural sites, culture, people, wildlife etc), while my wife wants to enjoy the Taiwanese food and shop around. The small girls like to do kids things (theme parks, fun fairs, swimming in the sea).

Can anybody suggest an itinerary starting and ending in Taipei? And how should we move around?

Does it make sense/is it possible to rent a car, or is it better to rely on public transportation (buses, trains, taxis)?

Is there any place with a nice beach where to bring the kids?
