Trip to South Korea w/Children (Need Itinerary & Hotel Help)

We'll be traveling to S. Korea this summer with our very experienced world traveling children who are in early elementary school. We know we want to see Seoul and Jejudo island, but need some help planning an itinerary in between.

We will purchase the rail pass and plan to use that to travel in between cities. Does the rail pass also cover the subway in Seoul?

I am having a great deal of trouble finding hotel rooms for the four of us. Due to the children's ages breaking us into two rooms is not possible. Any suggestions will be appreciated.
