Tour operators to Kunming, Dali, Lijiang

My husband and I are going on a GCT tour to China for 3 weeks in October and plan to go out on our own at the end from Hong Kong to Kunming, Dali and Lijiang. We have 8 days. We want all our arrangements booked ahead of time including sightseeing. Any suggestions?
