Thailand Trip Late May/Early June - which Beach is best for weather?

Wondering if you could help me out. My husband and I are planning a combo 13th wedding anniversary/40th birthday celebration with a trip to Thailand. I've never been to Asia but have done our research and Thailand looks like a lovely country. We plan to be gone for 10-11 days (we've never left our kids this long so this will be a stretch!). We were thinking we'd fly from the States to Bangkok, 3-4 days in Bangkok and then 5-6 days at a beach. The dates we are looking at are May 27th - June 9th so I know weather won't be ideal in all parts of the country.

Would you say the weather would be better in Hua Hin or Koh Samui? Or is there another area I should consider? This is a splurge trip for us so we are really looking for luxury, peace, relaxation and a little romance! Any hotel recommendations in both BKK and beach locale would be appreciated as well! Thanks for your help.
