Note that it is unlikely that the places you mention are fully booked a year from now. Many Japanese hotels/ryokans don't open reservations until 6 months before. Email the Ryokan directly to ask.

I assume you have already looked through sites like https://www.ryokancollection.com/ and http://www.slh.com/destinations/asia/japan/ and http://www.japanican.com/en/special/...aspx?GN_ryokan and http://www.secret-retreats.com/ ... though perhaps many of these properties would be too commercial for you, it's hard to know what you mean by that, can you elaborate?

I loved our recent visit to Hyakurakuso at the northern tip of the Noto Peninsula, but it's got quite a few more than 7 rooms so it may not be up to your criteria.

kavey ! Wow -immediately looked Hyakurakuso. I love it ,Yes some Ryokan and the surroundings!! this is exactly the place I am looking for ,I defiantly will make a plan there may be 2018, mean while I am planning for 2017 for the Izu peninsula and starting from Hakone,to Toba, between Atami, Ito,Shujenji, if 20 or more rooms ryokans would be too crowded, more intimate , cozy smaller establishment would be the ideal.yes I looked all the sites except Secret-retreats-I will study later,Thank you so very much for the big help of Info.Love it.

Don't know if you are interested in this area, but Kayotei, about 20 minutes outside Kaga Onsen meets all your other criteria. It is heavenly!! Only 10 rooms total, 3 have private baths. And another vote for Hyakurakuso but it is a larger hotel.
