The airport express is, without doubt, the best way to go. Takes less than 20 minutes and you can check your luggage and get your boarding pass before you get on the train.
The airport express is HKD 90 from Hong Kong station, may be slightly less from the Kowloon station.
Don't bother with a taxi to the airport unless you really want to see motorways. Airport express is one of the nicest parts of the HK airport.

A taxi is nice as it requires no transfer. In Hong Kong, most people get about 30% off long-distance cab fares by calling "secret" numbers. You can ask the hotel's concierge to do that for you.
Or if you don't care too much either way, get into a taxi and ask for the Kowloon Airport Express station. I will say that 8 times of our 10, the cab driver will offer to take you to the airport either at a fixed fee or 30% off the meter. No baggage charge either. HK$220 or so, all in, will be about right, which is basically the same as 2 AE tickets plus the cab fee from the Shangri-La to the AE station.
So, similar cost, similar time.
But since you also asked about the "best way", the Shangri-La should have airport transfer (for a fee) in its Mercedes or maybe even Rolls-Royces. Ask about that too.

I have had exactly the same experience as rkkwan: ask the driver to take you to Airport Express, and he'll offer a good fare (around HKD200) to the airport.
Unless I have a prepaid AX ticket (eg, free return that would otherwise expire), I always take the taxi.

Yes, I had the same offer from the taxi driver. However, I chose to take the airport express, only because I did not know if there would be any traffic problems which might delay my arrival at the airport. En route I periodically checked the highway from the train, and the road was clear and the traffic moved right along. So in my case, either taxi or train would have worked out fine.

There's never traffic on the highway from Kowloon to airport, unless for some accidents.
As I said, timewise they are about the same. The train runs at a higher speed, but you waste time transferring from taxi to trains. And as described, cost for two are similar once you get a deal from the driver.
One other difference is city check-in at the Airport Express station. If one's running very late AND your airline allows it, then you'd better check-in at the AE station and take the train.
