If I remember correctly, there's not too much to do. There's always duty-free shopping. Also, my husband was once arrested there by airport security (this was during the days of martial law and they thought he might be smuggling out a cassette tape with something secret on it). However, you would have to be pretty desperate for entertainment to want to enter into THAT activity!
I was there two weeks ago. Take a good book. There is absolutely nothing to do in that horrible airport. There is a place that you can pay to use the internet, so you can kill an hour that way. You might want to go into the city, not that there is anything to do there either.
I was there a month ago. I have to agree with the previous posters - there is nothing to do at this airport. Bring plenty of reading materials.
If you decide to leave the airport, one worthwhile destination is the National Palace Museum in the suburb of Taipei. It holds the largest collection of Chinese art and antiques - including the imperial treasures saved before the communist take-over - in the world. With only 7 hours, you'll need to plan your timing well. It'll probably take an hour each way from airport to museum (my guess - maybe more), and you could spend hours at the museum once you're there.
Good luck. Really, visit the museum if you can. The collection is truly magnificent.
