If you're considering flying direct and then to add another country will cost you a lot more. I would choose an airline that will require a stopover, perhaps the airline of the country you want to add on, and you should be able to save money.
For example, fly Thai to Bangkok and connect to Seoul. On the return leg stop in Bangkok and you can visit a beach destination in Thailand for some sun.

thai beach areas are very nice... you can fly home directly from bkk on BA too. use a split ticket and fly seperately from seoul to bkk on some other carrier...
hua hin is a nice beach area, not requiring another flt... you might be able also to fly directly from seoul to phuket???

My Thailand example is only to show the possibilities of flying with a stopover vs a direct flight to South Korea. The airlines that flies directly from the UK to SK will not have a stopover option in another "warm" country unless you fly code share which will be more expensive IMO.
For example buy a ticket on Thai Airways from London to Seoul and you will automatically have a stopover in Bangkok. As for a beach recommendation it will depend on the time of year you are planning to come.
You can also do the same with Singapore Airline and stop in Singapore, Cathay Pacific and stop in Hong Kong etc.
