Do you have the Korean Air flight? My friend had that last year and we had enough time to take her into the city for a palace tour and lunch but that was when Kimpo was still in opperation. If you have 8 hours, I'd say you have plenty of time to sneak into Seoul, if only 6, you'd probably better stick around the airport. I haven't seen anything interesting in the area.
KAL has airport busses to the center. If you would like to wander Namdaemun market, get off the bus at Hilton and go inside to get directions to the market (within walking distance) and also a business card incase you can't get back to the hotel on your own. Insadong is another nice area to wander (can't think of the nearest hotel you'd get dropped off at though).
The trip to Seoul shouldn't take more than 1.5 hours.
If you want to play it safe, there's plenty of shopping at the airport and you could always take a nap, as stated in the previous post. For lunch, there's an good Asian food court (opposite the western food court) just down the way from Christian Dior.
