Hi Jana,
You can do a very nice hike from Pokhara to the village of Sarangot. This is a day hike but worth spending the night up there. There is plenty to see and do around Kathmandu as well such as hike up to the hilltown of Nagarkot, visit Bodanath Stupa, the Monkey Temple and so on. Get a good Nepal guidebook and it will suggest other short excursions. In Kathmandu, try staying at the Kathmandu Guest House. In Pokhara try the Fish Tail.
Have fun with the research,
Andy Crisconi
