for independent "wandering" through Laos, Nepal and ? from 11-10 through 11-23, can I book same day/2 or 3 day ahead good accomodations in Laos, Nepal and (fill in the blank based upon geography and time--maybe Thailand?--though I went to BKK, Chang Mai, Chang Rais and Chang Sen a few years ago)? I also need to arrive in Nepal on 11-23, and begin this journey on 11-10 in Vietiane. Ideas for where to go, how long to stay, and how to travel are greatly appreciated!

As it is high season in Laos, you should book as far in advance as possible to assure you get a place at a reasonable rate. You'll pay 25% or more above the advance booking rate by waiting until the last minute.
Depends what sort of accommo you are looking for, and if you are the sort of person who can just wing it - aka a "real traveller". haha
Seems you want to visit as an "independent wanderer". But with all accommo pre-booked. Through the internet one assumes. And 4-5 star, doubtless. Yes?
Oh dear, suggest you take a tour, unless you really want an adventure.

PS - you can just make it up as you go along. Why not? Thousands do. I have. Depends on your comfort levels.
