i am trying to decide where to take my girlfriend for our first real trip together. I would like to have a perfect beach but with other things to do. I was thinking the Maldives, but not sure if i would get bored just on the beach, as it doesnt seem there is much else to do. Mauritius and Seychelles seemed interesting cuz they are bigger and have different types of terrain. Any ideas, suggestions or advice would be truly appreciated. I am looking to go April 2 and stay for 10 days, so i must decide soon.

Out of the 3 location Mauritius will offer you the most activities but the beaches and sea of the the Maldives are much better for casual swimming, snorkeling or diving(Mauritius much better for fishing). 10 days or nights is a tough one and IMO that's too long for all of the 3 locations on your list.
If it was me I will choose the Maldives as it will have more "ooh" factor with your girlfriend and I would split up my time to 2 resorts. I've stayed at the Soneva Gili which is a small island but all the villas are over the water and then flew by sea-plane to the Soneva Fushi which is a bigger island with lots of trees and the villas are hidden along the shoreline of the island. Both different and unique and offer different activities. I think I could spend 5 days at each resort without any problem but I had a lot friends with me.
