lost for choice

This is a great source of info.Tks for previous replies. I was intending to fly into HongKong on 7 Feb, then travel up to Shangai and on to Beijing, stopping 2 or 3 villages along the way and leaving from Beijing on the 23 Feb. After reading so much here I very tempted to fly into say Ho Chi Minh, travel up to HongKong by boat and continue from there up to Beijing inland. I would love advise on whether 1. another place could be fit in such dates. 2. And suggestions on what other place to include i so. Cheers a million.
