July trip to Asia- advice needed

Planning a last minute 2 week trip to South East Asia this July. We plan to visit Siem Reap and stay about 4 days visiting our college daughter who will be volunteering there( reason for the late plans). Have been watching airfares for past few weeks. Would probably fly JFK to BKK round trip or could fly JFK- BKK-SGN- JFK. I would like to spend a few days in Bangkok and other than Siem Reap are pretty flexible. Would you recommend Ho Chi MInh City visit ? I have difficult time deciding. I would love to visit Luang Prabang but do not know if time is too short. I will be traveling with soon to be college graduate (hopefully!) and we both enjoy sightseeing, some people watching, local and laid back flavor. Any advice would be great.
