Japan in February

Hello all, first-time poster long-time reader.

My wife and I are considering a trip to Japan in February, ten to twelve days or so.

Not the best time to visit I know so I'd be interested in your recommendations.

We don't ski or snowboard, we're aware of the Sapporo snow festival but aren't sure if we want to make the trip there.

We last visited in 2015, we went: Fukuoka, Osaka, Hiroshima, Miyajima, Koya-San, Kyoto, Kinosaki, Matsumoto, Takayama, Kanazawa, Tokyo.

I have previously travelled around much of Kyushu and have visited Hokkaido and Yamaguchi.

We are early 30s - the most fun we had on our last trip was hanging out with locals in Osaka, Onsen in Kinosaki and the food + onsen in Okuhida. In particular if anyone can recommend a ryokan as perfect as Nishimuraya in Kinosaki or Yumoto Choza in Okuhida I'm all ears as they were among the best stays we've had in our lives.
