Japan in December with a toddler

We are planning on going to Japan for 2 weeks mid Dec (flying home before Christmas), with our son who will be 18 months old at the time.

I'd love some recommendations of places to visit/things to do. Googling can get really overwhelming! It's the first time for all of us, so we'd like to see as much as possible, but also not be rushed. At the moment I'm thinking of finishing the trip with a few nights in Tokyo and flying out of there, but am not really sure about where to start. I'm guessing it would be easiest to fly in elsewhere and work our way to Tokyo. Disneyland and snowboarding are definitely on our to-do list, but really we just want to see Japan and everything it has to offer!

Also, this is our first time travelling overseas with our son. I have no idea about what we would need to bring for him. We'll mostly go through a travel agent for flights and accommodation so I can check with them re: portacot/cots. I was wondering if we would really need a stroller though? We have a carrier and harness so he can have a wander if he wants and not run off. Carrier for when we are walking around...I just think that may be easier? Also, car seats. I'm assuming we'd mostly get around by train, but may need the odd taxi ride to/from airports etc. Are car seats available for hire easily enough? The less baggage we need the better I think!

Any tips/suggestions would be greatly appreciated! Thanks in advance :)
