I have not flown Hong Kong Express, but have flown Hong Kong Airlines a few times, which is their sister airline. Check-in for both at Hong Kong Airport is from Terminal 2. If you take the Airport Express train to the airport, follow signs for T2/Terminal 2, which is just a few minutes’ walk. The gates they use are generally in a remoter part of the airport, and they tend to use buses and then stairs to get up to the planes, they don’t always use jetways, if that makes a difference. I thought Hong Kong Airlines was perfectly fine. It’s a short flight to Okinawa so even a bad airline would be livable. I don’t know much about their on-time record, there are probably websites where you can check this. The few flights I have had with them were on time or not memorably off schedule.
