Help with Vietnam and Cambodia trip

We are 2 Irish women in our 50's who are heading to Vietnam and Cambodia in January or February 2016.
We are wondering which would be the best month to travel?. We are going for 3 weeks in total.We want to spend 4 days in Siem Reap and Angkor Watt and the remainder in Vietnam.
As this is our first visit should we plan the trip with help form this forum or should we go through a travel agent?
As I get travel sick on buses I was wondering if we should spend the time in North Vietnam or also visit south Vietnam ?.
We were thinking of flying into Hanoi
4 days in Hanoi
4 Days in Siem Reap & Angkor Watt
3 days in Halong bay.
We would appreciate people to recommend other places to visit for the remainder of the trip .
Should we go further afield and if so we would want to fly between cities would we book the flights before we go or wait until we get to Vietnam.?
Both of us are hill walkers and would like to visit the countryside but wonder if it it is safe for us to travel on our own as we do not speak the language or is it easy to hire a guide to take us.
Can people also recommend hotels for approximately $40-$50 per night.
