HELP! Thailand Itinerary for LARGE family!

We are planning a family trip to Thailand in late June/ early July for 7 days (on the ground). Family comprises of 10 adults, 2 children (ages 12, 7) and an infant (7 months). We don't want too much moving around but as a first visit to Thailand not sure what to focus on.

Some locations:
- A villa stay in Koh Samui plus some obligatory Bangkok temples, shopping, markets, crowds
- Phuket, Phi Phi and Bangkok
- Chiang Mai and Bangkok
- Will be happy to ditch Bangkok based on your advice

Some thoughts:
- As a large group, we have to stay in a villa/ bungalow kind of place. Hotels work out too expensive
- Wrt things to do - some snorkelling, floating markets, boat ride to view the limestone formations, elephants/ tigers/ other animals for the kids, hiking/ cycling etc. Mostly, the older gen likes to sit around with good food and cocktails while the others roam around doing stuff - food is very very important and so is alcohol, we will take any combination of activities that the area offers, not picky at all

Please help! I need suggestions on a feasible itinerary and maybe suggestions on things to do, places to stay, where to eat, everything...
