Good Taiwanese eats in Taiwan Airport?

We have about a 3 hour layover in the AM in Taiwan.

Does anyone have a recommendation for a good sit-down Taiwanese dim-sum restaurant (preferably in Terminal 2, past security)?

At the Taoyuan airport there is a food court one level below the arrivals area. The food is not bad.

Don't expect to find the famous (actually Shanghainese style food) Din Tai Fung at the airport yet, and the basement referred to is outside customs and mostly a staff food area.

Try Terminal 2 on 4th floor: Wu Hua Ma Dumpling House & Chinese Restaurant, for real Taiwanese cabbage and pork, or shrimp dumplings.
