From Hanoi - Laos or more Vietnam?

More advice needed from the Asia experts on this forum. I posted a week or two ago about trips from hanoi for 2-3 days. Now our plans have changed, and due to all the holidays in HK, we've decided to spend a Saturday - following Sunday or Monday in and out of Hanoi.
Sat - Tuesday we need to be in Hanoi (meeting family members). The debate is where to go from Hanoi. We will probably book flights to and from HAN due to direct connections back to Hong Kong.

Our options: 1)Sapa and a day trip to Ha Long Bay. Leave Hanoi Tuesday night, maybe 2 nights in Sapa, train back to Hanoi, Saturday in Ha Long Bay, back to Hanoi for a night

2) Fly to Luang Prabang and spend 3-4 days. I'm tempted to do this since otherwise Laos is a pain to get to from HK (we're americans living in Hong Kong) and it's easy from Hanoi

3) Fly to Vietiene (same as above - not sure which city is preferable)

4) Fly to Hue - 3 days

The flight to Hue is pricey but once we arrive to Hue, it's relatively inexpensive. Laos is oddly pricey compared to Vietnam. We are not interested in Ho Chi Minh City, and like beautiful landscapes, some hiking, great scenery. Local culture is not as much of a draw for us so we are not interested in staying with a local family (one of the draws of sapa)

This trip will be the last week of April. Thanks in advance!!
