First time to Japan for 19 year old and Mom (me)

Last month, my daughter and I had a lovely 3.5 weeks in Ecuador and we are itching to make our next journey. Since I work at a public elementary school, I am pretty much constrained by school holidays.

We are considering a trip to Japan for the week of Thanksgiving. I am requesting an additional three days, which will bring us up to 12 days (including two of long flights.) I have looked at other people's plans coming up for a similar time and was hoping for the collective input on our ideas.

Daughter wants to be an animator or video game creator, so the Ghilbi Museum is a must-do. We very much enjoyed our food tours in South America so those are on the list, too. Kyoto is at the top of my list, and I'd like to include Hiroshima and Miyajima in these 10 days. Is it too much? We haven't purchased tickets yet.
