Looking at flights from HK to USA. What an assortment of choices. HK to LAX, fly first to Chicago, then LAX. But my real need is whether EVA flight from JFK at 1:45 am is booked up or often open and empty. And is EVA a reasonable choice. Any recent flyers?

eva gets good reports..
i don't know any overseas flts that are not fully booked these days

I have flown Eva for about 8 years at least once if not twice a year from the UK to the far east. For me they represent great value for money in Biz class and premium economy. I haven't flown economy with them though.
Flew economy SFO to BKK stopping in Taipei in January. Have used China Air and Singpore for similar routing. EVA falls maybe a little better than China, but not as good as Singapore.
Think about travel time.
The 1:45a flight from JFK gets to TPE at 5:35a, connecting to a 7a flight arriving HKG at 8:40a. If you fly CX at 1:30a, you can arrive HKG at 5:20a, more than 3 hours earlier, and be back home sleeping soundly by the time the EVA arrives at HKG.
For such a longhaul, that makes a huge difference in comfort.
A few years back i had a CX flight from SFO to HKG departing 1 am. Many empty seats towards rear of plane and i slept flat and well across 3/4 seats. Soon, hopefully will be returning to HK after knee surgery and would appreciate the 'stretch out'. Yes, otherwise i prefer nonstop. And EVA substantially cheaper than CX and not all CX planes have nice seats. As i said, many choices.

That information varies so widely, especially these days, that I don't think any historical information would be useful. When I flew EVA back in May, there were a few different flights to choose from, with different layover times, on different dates. It helped to be flexible. Premium Eco (the old 'Deluxe' class) was mostly full, every flight.
