Thanks to everyone for continued advice, as we are less than three weeks to go before we leave for our trip to Burma (with stops in BKK on either end). I know i'll have lots of questions as I reread trip reports, look for restaurants, etc,. Here's the one big issue: I recently got our internal flight schedule from Zaw and they are all VERY early in the morning. We have two full days in Mandalay, arriving around 8:30am from Bagan. The two things I really wanted to do in Mandalay were sagaing and pyin oo lwin but nixed the latter when I thought I only had one full day. Currently we would spend the first day in mandalay and then have a guide to take us to sagaing on the second day. But there's not that much I really want to see in Mandalay (not really interested in the palace or the hill) and am wondering if it makes sense to go to pyin oo lwin straight from the airport, maybe even spend a night, then have the car take us to sagaing the next day. I don't know distances, can't find much info on hotels in pyin oo lwin (I thought it might be cooler spraying there than in Mandalay). Does it make sense to do either a day trip to sagaing from pyin oo lwin? Or to go directly to one or the other from the airport on the first day? Our flight leaves in the early morning (around 9) to Heho on the morning of the third day. Thanks again everyone.

Yes, lots of the flights in Burma are early morning.
I think you will need to nix Pyin U Lwin. It's a couple hours drive each way. There are not many places to stay (a few low-end guest houses and a couple of old residences that have been turned into B&Bs and are owned by the government.)
Do make sure you see the Mahamuni Buddha in Mandalay, and I thought the gold-leaf making was worthwhile. And do make sure you go to the U Bien Bridge.
Where are you staying in Mandalay?
Ok, thanks, I'm sure we'll be able to fill the day. We will be at the inn by the red canal. DH, who usually leaves all planning to me, for some reason got interested in Mandalay hotels and wanted to stay there. Elsewhere, The Strand, Tharabar Gate and Inle Lake View, thanks to all your recs, Kathie.
The Inn at the Red Canal is supposed to be lovely, and its restaurant is highly recommended.
Enjoy Burma!
