Chiang Mai
We will be going to Chiang Mai in the end of January for 4 nights, prior to Myanmar.
What is the recommended transportation from the airport in CM to our hotel? Is it safe to take any taxi, and how much should we expect to pay?
Does anyone have any particular suggestions for sightseeing/activities?
Thank you so much in advance for your advice.

Our hotel charged 200 THB for airport transportation. You should expect to pay less than that, depending on where you're staying. I haven't had any problems with taxis or tuk tuks in Chiang Mai, but you should be able to negotiate the price.
I particularly liked Doi Suthep and Doi In. My favorite day was spent at Elephant Nature Park (pay particular attention to the name of this sanctuary). I also like the Sunday Walking Street and shopping on the sois at Nimmanhaemin Street and Charoenrat.
Have fun. Things in Chiang Mai are cheaper than they are in Myanmar.

Yes, it is safe to take any taxi in CM. When I was last there, there was a flat rate from the airport to any hotel in town.
I love Doi Suthep. Go as early in the morning as you can.
If you want to visit the Elephant Nature Park, you must make arrangements in advance.
