Hey, you haven't even been there yet!!
I see Agtou gave you some good reccos in some other posts. Some I would include are:
Sit in the sun on the beautiful beaches.
Eat the fantastic Goan food.
See the bits of the Portuguese colonial architecture that is left, esp in downtown Panaji and Old Goa. Besides churches, of which there are several, there are some other buildings left as well.

Enjoy the shopping for Indian handicrafts (esp Arjuna Flea Market held every Wednesday) and some little boutique designers.

Enjoy the sunsets over the ocean (I am an East Coast US girl and always find this so different)

Enjoy the Goan bands, the Fililpino bands of India.
Consider renting a motorcycle or vespa/scooter and riding along the coast or exploring the inland countryside (not for the faint of heart). A car and driver for this trip would be fine as well.

Visit Panjim, the capital.Shop at Polo/Benetton etc. and buy at bargain prices.While you are in Panjim try the ice cold, air conditioned cake shop at the Goa Marriott or sip a cool drink in their foyer.Walk up to Miramar beach.
Take an auto rickshaw to Dona Paula.
Buy a ticket for a (crazy) night time riverboat trip from the Panjim jetty and watch the Goans let their hair down.
Look at the wonderful architecture of Old Goa.
Visit spice plantations/toddy tapping/taste cashew feni (ugh!)
Dolphin spotting (from Coco Beach).
Visit the Kingfisher beer factory-drink as much as you like.
Visit Braganza house- South Goa.
Visit the waterfalls- picnic lunch & swimming.
Crocodile spotting/ bird watching trips.
Mapusa market (pronounced Mapsa).
Village trips to see ropemaking/pottery/ village life.
