I am giving my husband a first class ticket as an anniversary present from Hong Kong to JFK. I would like to have him get a great view of HK island as he flies away. Should I book him on the left side of the cabin or the right?

Right side and hope the flight uses Runway 7R or 7L for take off towards the NE. He should be able to see the harbor and HK Island, weather and air quality permitting.
If it uses 25R or 25L towards the SW, then it depends on which route it takes. It may turn right up through China, and he won't see HK Island at all. But it may make a U-turn to the left and head towards Taiwan. In that case, he can see the south side of HK Island from the left.
Impossible to know it really depends on the runways, used, winds and the flight path. I've had excellent views of HK from both sides of the plane when departing from HK. I'd be inclinded to choose the left side of the plane not so much for views, but the right side probably will get the sun for most of the flights duration.
