The only beach resorts that I know of are on Hainan island. There are other areas with beaches but I don't think they could be considered resorts. Having never been to Hainan island, I can't offer any comments beyond that.

What beach resorts there are in China do not remotely come up to the standards of those in many other parts of Asia, either in facilities or cleanliness of beach or water (in which you would usually be ill-advised to swim).
The nicest beaches in China are said to be at Sanya on Hainan Island, but there's little to do, and the town as a whole takes a beating from domestic tourism. If your time is limited you wouldn't want to go out of your way to get there.
Do try to make time to go into the countryside away from the main tourist routes if you can. There's a great deal of charm and considerable beauty to be found there. And it's where 70% of Chinese still live, of course.
