Decide if you want to go into the city or visit the Big Buddha and fishing village of Tai O. If you decide on the latter, then I can provid you with logistics.

For shopping,

1. Tung Chung Shopping Complex
2. HKIA just near to airport

Try to visit Harbour City where you get lots of restaurants and places for shopping.

Oops. Rkkwan, here now. Fly out early tomorrow. Spent the day resting up and trying to strategize the long flight back to the states to minimize jet lag. Don't know what the OP is. Thank you!

8 hours are a good time to explore Hong Kong. Make sure to calculate enough time for immigration and getting to/from the sightseeing attractions. A good stop-over guide for HK can be found here http://www.nextstophongkong.com/attr...urs/stop-over/

Best/fastest way to get to Big Buddha is with the Airport Express train. Take this to Tsing Yi station and transfer to Tung Chung Line. At Tung Chung you can take the scenic cable car ride.

You must be kidding about taking the Airport Express and switch to the MTR. Unless you work for the MTR company.

Even if one doesn't care about the S1 bus to Tung Chung, a taxi will be faster, cheaper and more comfortable. Even for just one person.
