8 Day Honeymoon in Thailand

My fiance and I are planning our honeymoon in Thailand and unfortunately with my job we only have 8 full days in Thailand to work with. We're flying in and out of Bangkok, so our current plan is to head south to a beach/island and then end in Bangkok. We definitely want to relax on the beach and snorkel / scuba as the main portion of our trip. Because it's May we know the Gulf side will be better weather, any recommendations for islands/beaches other than Ko Samui or is that the best place to check out? We're looking for the best experience possible with our weather/time limitations.

Also part of me also wants to see elephants and tigers (in the most humane way possible) and I'm not sure we have time to make it up to Chiang Mai. We plan to spend at least 2 days in Bangkok and I'm curious if anyone has ever done the day trips to the tiger/elephant reserves from Bangkok? Or is it worth jamming in a 3rd destination to our itinerary and making the trek to Chiang Mai?
