6 days in TAIWAN

We are going to Taiwan for the first time this April. We are spending 3 days in Taipei for work, but are taking 5 days afterward to travel.

We are thinking of starting off at Taroko Gorge. (Monday and Tuesday). My question is about accomodation. Is it better to stay in Hulaien? Do we need to reserve in advance even on weekdays? is there smaller more scenic towns, closer to hiking trails? We were also planning on taking a train there, and maybe rent a car to visit the park if it is necessary.

We are planning on spending 2 nights close to Taroko Gorge, and then go inland. Any recommendation? Is Sun Moon Lake too touristy? how about a romantic hot spring somewhere. Any ideas? we like scenic walks and of course hot springs. Any romantic inns in the mountains?
