Two hours is just long enough to get something to eat and do a little window shopping. There is a free art space/museum just beyond the United club area that has different exhibits. If you can have access to one of the lounges, it is long enough to have a shower, eat a snack and do a little email or reading.
Keep in mind that you have to go through a security screening, even when you are just in transit, and the lines can sometimes be quite long. (you do that before you eat or shop, so at least you can plan your remaining time)
