Oct trip from Chicago to Italy - too early to buy Business class tickets?

We have confirmed spots on a tour to Italy in October. It starts in Sorrento, and we plan to fly into Naples, and fly out of Venice, where the tour ends. We are traveling from Chicago (O'Hare). Since it's been some time since we have traveled overseas - 25+ years -, we also are seriously thinking of treating ourselves to Business class so we can experience flat seats on the long flight over and back. I've been looking at different airline sites and right now there is lots of availability in Business, but with there being fewer seats in Business vs Economy anyway, I'm wondering if we should buy tickets now while they are available? I know that airlines run full flights these days and I'm just not sure of the general timing of when Business class gets full. We also want to make sure we get the better seats (not by the galley, lavatory, etc.) but don't want to buy so early that perhaps we might miss out on any potential deals (which I understand no one would yet know about anyway). And one more requirement is that we'd like to have only one stop over each way, and that it be between 3hr-6hr so we aren't rushed changing planes but not sitting for hours in the terminal.. We have a lot of wants on our list! So the bottom line question this - is there any general rule/experiece we should follow on the timing of buying Business class tickets to Italy with the type and timing of flights that we want to take?
