I'm planning to fly into JFK Terminal 1 on Turkish Airlines, scheduled arrival 14:50 in early November. I'll be leaving on a separate ticket on JetBlue from Terminal 5. I'll be traveling on a US passport but I'll have one piece of checked luggage. How much later should I book the JetBlue flight?

Hard to say ... depends on how fast (slow) you make it through immigration. If yours is the only flight arriving at 3 pm, a breeze. If, more likely, there are a few international passengers already waiting to get through Imm, it could be more than an hour. US passport or not. The wait can be quite long at times.
There is an AirTrain connecting all terminals, so getting from T1 to T5 should not be more than 10 minutes. And since they want you to check in at least an hour before a domestic flight, the earliest I would book JetBlue would be 5pm?
