Departing FCO
It's been a few years since we departed from FCO and my recollection is that it was a lengthy process and involved checking in at one area and then going to a separate terminal. We are traveling on AA direct to DFW in July. AA's website indicates that after March, 2017, their departures are from Terminal 3, E gates, but no further info about check in. Does anyone have recent experience they might share? We would typically arrive at least 2 hours before our flight.

I'm not sure you'll find the procedures all that different from check-in at other airports.
If you are doing only carry-on and have already checked in online and printed out or downloaded your Boarding Pass(es) simply go to Terminal 3 and proceed to the Security Checkpoint to enter the secure area of the terminal. Once past Security you proceed to Passport Control and then go on to your your Departure Gate
If you have luggage to check then first go to the AA Ticket Counter (in Terminal 3) to get your Boarding pass(es) and check your luggage. After that proceed to the Security Checkpoint, Passport Control and your Departure Gate as described above.
It's all relatively easy and arriving 2 hours prior to departure time should be fine. Last time we flew out of FCO we were on Business Class and were sitting in the Airline Lounge in less than 30 minutes after arriving at the terminal.

When I flew out of there in the fall, it was still the old procedure. Check in at T5 (bus from T3 to T5) and bus to departure area. Both are remote from the rest of the airport, but FCO now lists multiple E departure areas (you will need to know which E). You might have a long trek to E depending on which E. Fiumicino has been remodeling forever.

OK, I have learned something once again on Fodors. When I went to Italy in 2014 I remember going to T5 as T5 had nothing but flights out to the US. I had read that T5 was used for US flights due to added security. We are going to Rome again this fall on AA, so you are saying we now must use T3? If I hadn't read this I would have gone straight to T5 so thanks for the heads up.
Of course I will check before going anywhere, in case it changes again.
